Ashley Schimke

2023 Food Leaders Fellow, Food Leaders Fellowship

Health & Nutrition Specialist, Arizona Department of Education

Ashley Schimke has worked for the Arizona Department of Education’s Health and Nutrition Services Division for nearly twelve years. Currently, her work is focused on special projects that help to propel School Food Professionals on their journey to build back from the COVID-19 pandemic by increasing access to whole foods and service of scratch-cooked and culturally inclusive meals. Among her professional work, she is also an avid volunteer and believes in the work of the Arizona Center for Rural Leadership, the University of Arizona Master Gardener Program, and the Blue Watermelon Project. Each organization is important to her and supports her interests in developing community, aiding under-resourced populations in the access to healthy foods, and efforts that strengthen Arizona’s smaller, rural, and tribal communities. Ashley studied business and nutrition at Arizona State University.
